“kaƱji” is a Tamil word (spoken in Tamilnadu, South of India) and may have entered English via Portuguese around 1698.
Usually it is made with rice. But now it has many variations.
Similar to plain steamed rice, congee acts as the blank canvas for a selection of side dishes.
